The school year has begun. And if you have children like mine, a hearty breakfast is a must. But like most of us we are thin on time in the morning. So here is a quick way to Healthy-Up (yes I made up that phrase) those box pancakes and give your children that extra boost for a productive day. And did I mention they are vegan too!
Mix these items together. Spray your pan or griddle with a non-stick spray and start pouring. I'm so happy I figured this out. My boys love them and all are happy! And that makes me happy.
Special Note: If your pancakes call for an egg. Mix together 1 tablespoon of milled flax seed with 3 tablespoons of water. This is equivalent to one egg. In this case, there is no need to add the extra flax seed as your substitute egg does the trick. Also, if your ingredients call for milk, swap it for a yummy nut milk like coconut, cashew or almond milk.
